Vegan Chocolate Muffins

Ingredients
  • 2 cups of flour (white or a mix of white and whole grain in equal proportions)
  • 1 cup of pure cane sugar
  • 1 tsp of soda
  • 15 g of cocoa powder (unsweetened)
  • 120 ml of vegetable oil (either sunflower or melted coconut oil)
  • 180 ml of non-dairy milk
  • 30 ml apple cider vinegar (or white wine vinegar)
Instructions
  1. Combine all the dry ingredients into a bowl and mix well
  2. Add milk and oil and stir until everything is well combined
  3. Add the vinegar and gently stir until you start seeing some bubbles
  4. Place the batter into your muffin tray, about two tablespoons for each muffin
  5. Bake at 180 degrees Celsius for 35-45 minutes (insert a toothpick into the center of the muffin: if it comes out dry, your muffin is done)
