Super-Healthy (and Delicious) Spelt Pancakes

Makes about 8 medium pancakes.
  • 180g of spelt flour
  • 1 very ripe banana
  • 320 ml of unsweetened soy milk (or any other non-dairy milk, although I found they work better with soy)
  • 2 tbsp pure cane sugar (totally optional)
  • 1 pinch of sea salt
  • 1 tsp of baking powder
  • 1 tsp of cinnamon (optional)
  • 1 tsp of vanilla extract (optional)
  1. Mix all the dry ingredients together in a bowl.
  2. Mash a banana with a fork and put it aside.
  3. Add the milk and the vanilla extract (if using it) to the dry ingredients mix and stir a little bit.
  4. Add the mashed banana to the mixture and stir until you have a perfectly smooth batter.
  5. Let it sit for 15 minutes and then you are ready to "fry" them on a non-stick pan with no need of adding any kind of oil. If you have a good non-stick pan it will be totally unnecessary and, trust me, the result will be much better than if you'd use oil, not just health-wise. Make sure the pan will be hot before pouring the batter, then keep the fire on medium-low throughout the cooking process. Flip when the sides of the pancake start becoming dry and the top starts to bubble.
